The Ivory Lentil (white dal) behaves like traditional lentils (best when soaked for at least an hour before cooking). They make an unusual addition to smoothies (cooked of course), and a delicious protein base for any meal. What’s especially rewarding is that these lentils maintain their integral color and shape, no matter what they’re mixed with. That makes them perfect for ‘rainbow’ dishes that require each color to stand out on its own.
For this dish, we paired them with red onion, bright bell peppers and fresh cilantro for a easy and tasty meal.
1 cup of ivory lentils (soaked)
3 cups of water
1 red onion, diced
6 cloves of garlic, peeled and sliced
1 red bell pepper
1 orange bell pepper
1 bunch of fresh cilantro, chopped
Sea Salt
Cracked Pepper
Cayenne (optional)
1 tbsp grapeseed oil
Saute onions, garlic and bell peppers in oil. Add lentils and seasonings and stir until flavors merge. Add water and cover to boil, then reduce heat to simmer… constantly checking and stirring. Add more water until necessary and simmer until fully cooked. Add cilantro and stir through, then immediately remove from heat. Serve alone or over brown rice… and steamed or raw vegetables on the side.
