Live Delicious: Lisa’s Chia Seed Balls

One of the latest participants in our NOURISH program has been kind enough to share a quick and delicious favorite! Lisa found a recipe for Almond & Chia Seed Energy Balls, and she swears by it!

“They take 5-10 min to make and keep for a long time. Keep in fridge or freezer and pull them out when you need more. So easy.”

You’ll need:

1 1/2 cups of almonds

14oz Medjool Dates (about 20 dates)

4 tbsp. raw cacao powder

2 tbsp. almond butter

2 tbsp. coconut oil

2 tbsp. chia seeds

Put the almonds in a food processor and pulse until they’re crushed (about 30 seconds). Pit dates, then add to almonds… along with the rest of the ingredients and 2 tablespoons of water. Blend until everything is mixed together and the consistency is nice and sticky. Roll the mix into balls and place them into the freezer to set for an hour. Then store in an airtight container and enjoy whenever you need a boost!

*you can sub out almonds for any other kind of nut*
